No Bake PB&J Energy Bites
A delicious afternoon snack that will cure the 3 PM slump.

Ingredients
  1. 1/2 Cup Creamy Salted Peanut Butter (or Almond, Cashew, or Sun-Butter)
  2. 1/4 Cup Maple Syrup
  3. 1 1/4 Cup Gluten-Free Rolled Oats
  4. 2 1/2 Tablespoons Flaxseed Meal
  5. 2 Tablespoons Chia Seeds
  6. 1/4 Cup Dried Fruit (i.e. Dried Strawberries, Cherries, Blueberries, Cranberries)
Instructions
  1. In a large mixing bowl, add peanut butter, maple syrup, rolled oats, flaxseed meal, chia seeds, and dried fruit of choice. Mix until well combined. If it seems to dry or crumbly, add more peanut butter or maple syrup. Too sticky? Add more oats or flaxseed meal.
  2. Chill in the refrigerator for five minutes.
  3. Scoop out 1 1/2 Tablespoon amounts and roll into balls. (A cookie scoop works well for this!)
  4. Enjoy!
Notes
  1. Store bites well-sealed in the refrigerator for up to one week or freeze up to one month.
