Easy, Spicy Vegetarian Chili — A “Super Bowl” Win!

If it’s your goal to make your Super Bowl buddies “Super” happy this Sunday, here’s a recipe that’s “Fit 4 You!” Serve this delicious Vegetarian hot and spicy chili during the game and you’ll score big with fans. Whether you’re feeding four or forty at your “Big Game” party, it’s super easy,  super tasty, and super healthy! 

(Remember, beans are the new beef!)

Easy Spicy Vegetarian Chili

Ingredients
  1. 1 Teaspoon Olive Oil
  2. 2 Medium Onions Chopped
  3. 1 Medium Red Pepper, Yellow Pepper Chopped
  4. 3 Garlic Cloves Minced
  5. 2 Cups Fresh Sliced Mushrooms
  6. 2 Cans of Black Beans
  7. 2 Cans of Chickpeas
  8. 1 Bag Frozen Corn Niblets
  9. 3 Cans (14.5 oz) Diced Tomatoes
  10. ½ Cup Bulgur or Couscous
  11. ½ Cup Water
  12. ¼ Teaspoon Cayenne Pepper
  13. ½ Teaspoon Oregano
  14. 1 Tablespoon Chili Powder
  15. 1 Teaspoon Dried Basil
  16. 1 Cup Salsa
Instructions
  1. Heat oil in a large pot. Sauté onions, peppers and garlic about 5 minutes on medium heat.
  2. Add mushrooms and sauté 4-5 minutes.
  3. Add remaining ingredients and increase heat to high. Bring to a boil.
  4. Decrease heat to medium and simmer, cover for 25 minutes stirring occasionally.
